Name: Kris Osborne

Blog name and URL: 80twenty and www.80twenty.ca

Where were you born? Chapleau, ON--A tiny town in Northern Ontario that is kind of in the middle of nowhere.

Where are you living now? Toronto

Why did you start your blog? To inspire people to eat a little healthier in their lives most of the time. I have a passion for food and eating well, and the blog is a space where I share my love of eating mostly real, whole, unprocessed foods with some treats thrown in on a fairly regular basis. 80twenty, right?

How did you decide on your blog name? I originally had another name in mind, but as I got to thinking about it, I realized that it didn’t really capture what I was looking to do, which was to inspire people to eat healthier most of the time. The earlier blog name reflected eating healthy food, in general, and I recall a moment where I said out loud, “if I want to eat pizza, wine, and chocolate on a Friday night, then I should be able to share that. It’s about balance--80 twenty.” And that was it. The name just came out like that and it stuck.

What do you blog about? I blog about healthy meals and snacks, and the occasional treat. I never sacrifice flavour. I believe that fat is good and that vegetables will bring more benefit to us than we can even begin imagine. Eating well helps us lead more vibrant and energetic lives. It’s clear in the research that our quality of life is better when we eat healthier food, but I have lived experience of this being true for me, and I want other people to experience it too.

What post are you most proud of and why? I loved the post 35 Things I Learned in 35 Years because it was an opportunity for me to reflect on what was most important in my life and to share some of the wisdoms that I’ve gained. In that post, I also made a gluten-free triple layer coconut cake that was mind-blowingly delicious.

Which post do you wish received more love and why?

I did a post on my thoughts on healthy eating. First off, the salad in that post is a gem! But I also love engaging with people about food, nutrition, and health and the ways in which these issues take up space in our lives. This post was a way for me to put in writing my thoughts on restriction and dieting, to some degree, and to share what I feel is a healthy approach to eating.  I guess, in some way, I have always hoped that people would see this post as a way to give themselves permission not to fear food.

Which post’s success surprised you and why? I wrote a post about my cat, who I’m utterly in love with, and I hear from people all the time how much they connected with it. The pictures are from an era where I didn’t know how to use my camera or an editing program (sorry that you have to look at them), but the story is about how she changed my life, and the recipe solid.

What is one (non-kitchen) gadget you can’t live without? This is going to be so cliché, but my iPhone. It connects me to so many important people and experiences in my life. Plus, they say that the best camera is the camera that you have with you and this is the case with my phone. I take a lot of photos and I’m a huge Instgrammer.

What is one kitchen gadget you can’t live without? My cast iron skillet. Life has never been the same since I got it.

Favourite food, care to share a recipe?  This question is always so hard for me, but I love eating in the seasons and right now stone fruit is plentiful, so I’ve been making this roasted apricot ice cream (or some version of it) again and again. It also just won the Kitchen Aid Canada Share In The Passion “frozen dessert” challenge, which was nice.

What else should we know about you that may or not be in your “About Me”page? I’m a person who actually enjoys going to the gym (I’m weird), I believe that laughter truly is the best medicine and I love to laugh (a lot), and lastly, outdoor music festivals and a walking around outside with a hot cup of coffee on a cold day are on my “top 10 best things in life” list.

What makes your blog unique? I think my perspective on food makes my blog unique. I’m not focusing on counting calories or reducing carbs or eating healthy in a more traditional or mainstream way. I simply want people to eat good, real food.
