Grilled Portobello Mushroom Burgers with Coleslaw (using remaining cabbage from Monday)

Saturday:

Easy Baked Macaroni and Cheese (with any leftover tomato soup on the side)

Wow…its wonderful to see so many vegetarian options. Being a vegetarian blogger myself – its really nice to see someone else do such versatile recipes. Thanks for sharing – I am definitely trying the marinated tofu fresh spring rolls. They look delicious!
