Getting food on the table quickly when everyone's been at work or school all day can seem like a huge task. So, this week we're turning the FBC Weekly Meal Plan to Sarah at Kiwi & Bean with some quick, healthy and simple meals that make everyone happy!

I am a compulsive meal planner. Cooking around kids’ schedules and busy work life leaves me no choice in the matter! I like to organize my week of meals around a set of themes: egg night, pasta night, veggie night, etc. Somehow figuring out what you are going to eat on beef night is just a whole lot easier than figuring out what you are going to eat on Wednesday. But it also makes for a balanced and interesting menu, with stuff that appeals to each member of the family.

MONDAY

Make Monday meatless, with these Quinoa Burrito Bowls with Chili Lime Vinaigrette. Top them with canned black beans, avocado, salsa, grated cheese and sour cream. Cook a little extra quinoa for Wednesday’s dinner.

TUESDAY

For Meat Night, roast your favourite veggies together with your favourite sausages in this Weekday Weenie Bake.

WEDNESDAY

Turn the leftover quinoa from Monday night into this Quinoa Fried Rice for Egg Night. If you want to bulk it up a bit, add chopped cooked tofu, shrimp or chicken.

THURSDAY

Pick up a couple of inexpensive trout filets, a bag of green beans, and a handful of almonds, and make our favourite Fish Night dinner---One Skillet Trout with Green Beans and Almonds.

This No-Cook Sicilian-Style Tomato Pasta Sauce is perfect for a summer Pasta Night.

SATURDAY

Order in or go out to eat. I only ever meal plan for six nights a week. Even the most keen home cooks need a break!
