Blueberry Mimosa

- 1 c. blueberries
- orange juice (to taste)
- Champagne (used as topper)
- Purée blueberries in the blender. Add enough purée to fill one quarter of a cocktail glass.
- Add a small amount of orange juice (to taste) and fill in with Champagne. Stir gently
Bartender's note: Leftover blueberry purée can be refrigerated in an airtight container and later added to smoothies.
