Za’atar Spice Mix

This spice blend is used a lot in North African and Middle Eastern cooking, both as a spice and as a condiment. Stir it into soups and sauces or spread on warm flatbreads for a delicious smoky, tangy flavour.
  • 4 tablespoons sesame seeds
  • 4 tablespoons fresh thyme leaves
  • 1 tablespoon ground sumac
  • 1 teaspoon flaked sea salt
  1. Toast the sesame seeds until lightly golden. Finely chop the thyme leaves.
  2. Place all the ingredients together in a bowl, and mix well. Stir into olive oil to brush on warmed flatbreads.
  3. If you want to store this mix, use dried thyme leaves instead of fresh.
