Smoky Spiced Honey Simple Syrup (Heat Infusion)
This is an example where simmering for longer makes a significant difference as the simmer allows more of the flavours to escape from the smoked hot pepper.
  • 1–2 dried chipotle peppers
  • ½ cup honey
  • 1 ¼ cup water
  1. Combine all ingredients in a saucepan and bring to a simmer for 5 minutes.
  2. Allow mixture to cool naturally, cover (without straining) and store in fridge. It will continue to develop flavour the longer the chipotle sits inside the syrup.
How to Use: I’ve been adding this to cranberry herbal tea along with a dehydrated orange slice. It’s also great with an amaretto sour (2 ounces amaretto, 1 ounce simple syrup, 1 ounce lime and an optional ½ ounce bourbon) and makes an interesting addition to lemonade (mix ½ cup simple syrup with ⅓ cup lemon juice and 1–2 cups of water depending on how intense you like to drink your lemonade!).
