Golden Mango Smoothie Bowl

Ingredients
  • 1 cup frozen mango
  • ½ banana
  • ½ cup coconut milk, plus more if needed
  • 1 scoop plant-based vanilla protein powder (21–22 gr, or about 2 tbsp)
  • 1 tsp agave
  • ½ tsp chopped fresh ginger, or ¼ tsp ground ginger
  • ¼ tsp ground turmeric
  • ¼ tsp cinnamon
  • the juice of 1 lime
  • pinch salt
For topping:
  • ¼ cup frozen mangos, chopped or sliced
  • 1 tsp coconut shavings
  • 1 tsp buckwheat
  • 1 tbsp gluten-free granola
Instructions
  1. In a blender add mango, banana, coconut milk, protein powder, agave, ginger, turmeric, cinnamon and lime juice. Blend until smooth, adding more coconut milk if needed.
  2. Scoop thick smoothie mixture into a bowl and top with sliced frozen mangos, coconut shavings, buckheat and granola.
