Dreamsicle Smoothie Bowl

  • 1 persimmon, or 1 cup cubed cantaloupe
  • ¼ cup frozen apricots, or peaches
  • ½ frozen banana
  • ½ cup almond milk, plus more if needed
  • 1 scoop plant-based vanilla protein powder
For the toppings:
  • ½ sliced banana
  • ¼ chopped persimmon
  • 1 tbsp pomegranate seeds
  • 1 tsp sunflower seeds
  • 1 tsp coconut shavings
  • ½ tsp chia seeds
  • ½ tsp hemp hearts
  1. Cut off the leaves at the top of the persimmon. Then add persimmon to your blender with the apricots, banana, almond milk, and protein powder. Blend until smooth.
  2. Scoop thick smoothie into a bowl and top with sliced banana, chopped persimmon, pomegranate, sunflower seeds, coconut flakes, chia seeds and hemp hearts.
