Overnight Oatmeal Cookie Casserole

  • 2 ripe bananas, chopped
  • 3 cups apples, chopped (I used Ambrosia as they maintain their firmness when baking)
  • 3 cups regular rolled oats (don't use quick oats for this recipe)
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 2 eggs
  • 2 cups milk (I used 2% but use your preference)
  • 1 teaspoon vanilla
  • 1 cup raisins
  • ¾ cup pecans
  • ¼ cup of butter, cubed
  1. Preheat oven to 375°F.
  2. Generously butter the inside of your baking dish (I used a 2.5-qt dish, 11"x7")
  3. Evenly spread the chopped bananas and apples in the baking dish
  4. In a large bowl, combine and mix together the oats, brown sugar, salt, cinnamon and baking powder.
  5. Gently add the contents of the bowl over top the banana and apples
  6. In a large bowl, add the eggs, milk and vanilla and whisk together.
  7. Add the raisins and ½ cup of pecans into the egg mixture and stir slowly.
  8. Pour the egg mixture slowly into the baking dish.
  9. Add chopped butter and remaining pecans to the top
  10. Bake until browned and bubbling, about 40 to 45 minutes.
  11. Let stand 5 minutes and enjoy!
