Everyone has a story. The story of Kathy Jollimore of Eat Halifax is pretty awesome these days. She and her partner Brent are opening a cafe called The Record Shop! It's slated to open this summer and there's been some pretty great buzz so far which is never a bad thing.

For starters, like Kathy's blog, the options at The Record Shop will consist of local fare be it gluten-free, dairy-free, vegetarian, vegan and some meat options. Like any good cafe, you'll be able to chill out with coffee and eventually an alcoholic bevvy too. Oh, and you can bring your own records to play!

Kathy comes by her passion of local food honestly and that's why she was such a perfect person to be the FBC's Regional Ambassador for the Atlantic provinces. She is constantly connecting with other folks who share her passion and interest in everything Halifax, Nova Scotia and all the Atlantic provinces have to offer. And really, what's not to love about meeting about baking and butter?!

Kathy has been hard at work secretly recipe testing in preparation for the The Record Shop which has taken up most of her waking and sleeping time but a quick glance at her blog shows the kinds of treats that await the city of Halifax. The Lemon Thyme Olive Oil cupcakes with Balsamic Buttercream look and sound decadent and fun. However, prior to the cupcakes, this quinoa salad with an avocado lime dressing is precisely the type of thing you'd expect to find at a cafe with vegan options.

And while Kathy is working away, there is no doubt, she is working on some extravagant burger(s) since she seems to have a love-affair (rightfully so) with them!

And if the photo on the homepage of the The Record Shop is any indication, it's going to be a pretty funky joint.

LOVE Kathy’s blog and cannot wait for The Record Shop to open! Kathy is an incredible contributor and support to the food community in Halifax. Can’t wait to see the exciting things that will happen for her and Brent in the coming weeks, months, and years! xo
