This recipe takes the classic avocado toast to an entirely new level and turns the classic into a delicious and wholesome snack.

Ingredients
  • 2 slices whole wheat bread
  • 1 avocado
  • Handful of arugula
  • 1 tablespoon OPA by Litehouseâ„¢ Strawberry Poppyseed Dressing
  • 3 strawberries sliced
  • Poppyseeds (optional)

Instructions
  1. Toast both slices of bread until they are crisp.
  2. Cut the avocado in half and remove the seed. Using a fork, scrape the avocado from the skin and mash slightly within the skin. Spread ½ of the avocado on each slice of toast.
  3. Toss together the arugula and dressing. Divide the arugula between the two slices of toast and top with the strawberry slices and additional poppyseeds if desired. Serve immediately.

Salads are a weekly staple in our house 🙂 One ingredient I always resort to cuz it’s always in the pantry would be dried cranberries. Good, simple and very tasty.

I consistently add cheese and fruit to my salads. I like pears and blue cheese. Feta and dry cranberries.

My favourite add in to salads is spice roasted chick peas and lentils. They not only add the slight spiced up flavour but are amazingly crunchy and healthy too.

Baked Chickpeas are a staple in the house, always added to salads and other meals for a good texture contrast.

Crispy chickpeas, toasted nuts, fruit, and cheese are on a solid rotation in this house to keep salad fresh and yummy everyday. My current favourite is adding in a small handful of mixed herbs; it feels very Fresh and perfect for Spring.
