Why did you start your blog?
I have always loved cooking, baking and writing. In the past, my focus was writing about my life, which happens to be quite humorous. I started a blog called NARSBAR-Confessions of Every Day Life, that was based on my daily experiences with my family.
I have always worked full time and taken care of a busy household of men with "big appetites”. So, I like to keep meals as simple and quick as possible. The blog is a perfect venue to share these easy recipes with my readers.
I have never wanted to be a “serious” chef. I want to have as much fun in the kitchen as I do in my life. The Simply Beautiful Eating blog is an extension of myself: bright, funny, quirky and (so I'm told) creative.
How did you decide on your blog name?
The food and recipes I create are simple, beautiful and I love eating them. There was symmetry with those three words that became an ideal concept for my blog name – Simply Beautiful Eating.
What do you blog about?
My family, recipes, photography, food styling and most of all, my daily adventures.
What post on your blog most encapsulates you?
Tropical Ice Pops is one of my favourite posts. I love working with flowers (that I steal in the neighbourhood) and food. The recipe for these ice pops is super easy, summery and truly captures what I love to work with when I style a shoot and blog.
Which post do you wish received more love and why?
I loved shooting and making this butternut squash mac n cheese recipe, but for some reason it didn’t receive as much love as I thought it would. Perhaps the notion of so much cheese in one dish was overwhelming to those who were looking for a healthier comfort food option? In my opinion, you can never have too much cheese! Nonetheless, it was a hit in my home and one of the best mac n’ cheese recipes I have ever made. Totally delish!
Which post’s success surprised you and why?
This recipe for Rose Apple Tarts was a huge hit both on my blog and on Instagram. I wasn’t expecting these to be so well received, considering that everyone seemed to be a Rose Apple Tart expert on the internet. Surprisingly easy, pretty to serve, they are a perfect dessert to display and will “wow” your guests. I believe the notion of using so few ingredients to make something so beautiful appealed to even the novice baker.
What’s your biggest challenge as a blogger?
That’s easy. Finding the time to write as well as working against the clock for daylight for my photography.
Share a couple of your favourite food blogs to read. Why do you like them?
Ina Garten has always been my food idol and I’m in love with the way she cooks and bakes (notwithstanding the amount of butter she uses in her recipes!) Her recipes are some of my “go to” staples in my food binder. For instance, I will not make chocolate chip rugelach with any other recipe but Ina’s. They are foolproof and the best cookie on earth!
I have been following Ree Drummond, a.k.a. the Pioneer Woman, for years. Her style of cooking is “down home ranch style”, super easy to follow and she makes it all look so easy and delicious both on her blog and now on TV!
Favourite food - care to share a recipe or a restaurant destination?
This is a perfect question because I’m obsessed with Cinnamon Rolls and Waffles. In this recipe, I fused them both together and threw my cinnamon rolls onto the waffle iron. Look what transpired! Heaven on waffled earth.
What are you working on next for your blog?
I’m currently putting together my next 4 blog posts: Cranberry Orange Bran Muffins, Chocolate Babka French Toast, Vegan Mini Pancakes with Coconut Cream and a Brunch Vegetable Pizza.
What else should we know about you that may or not be in your “About Me” page?
I’m a yoga enthusiast, cycle instructor, personal trainer and I love to paint and lie on a beach when I’m not working on my food blog. Oh wait; I’m also a paper towel hoarder. That’s something that I really didn’t want to admit but it’s true.
What makes your blog unique?
I believe my humorous style of writing, food styling, photography and simple recipes make my blog unique.
