I don’t have to tell you that pickling and preserving are big trends these days. Just look at the success many Food Bloggers of Canada members have had with posting recipes and writing books that educate consumers on these heritage arts.
What is new in pickling for this year is the rise in the number of pickled fruit recipes and products that are emerging onto the market. While sweet and savoury chutneys and relishes have a long legacy in Canadian mason jars, these new iterations feature whole or large chunks of fruit in a truly pickled format.
What does this trend mean for bloggers? Hopefully it will prompt you to develop a host of new recipes not just for making pickled fruit but also to create ideas for how to use them in home cooking. From appetizers (think cheese board); to main courses (imagine a salmon burger with a pickled peach or mango instead of a dill); to desserts (think tangy accent for a rich chocolate mousse), I’m excited to see what creative chefs and cooks will do with increasingly popular fruit pickles!
