People often ask me what the next big thing will be. Sometimes it’s not easy to predict what cuisines will flourish, but I feel very confident that Filipino food is ready for its close-up! What’s interesting is that it took so long. With more than two decades of Filipino women migrating to North America to work as personal care workers and nannies, you’d think that Filipino food would have taken off sooner. After all, there are now two generations of Canadian and American kids who were exposed to the Filipino foods their nannies made for them when mom and dad were too busy to cook.
Hakka is a slightly different story. I think a lot of us have eaten Hakka food and just not recognized it because we were in what we thought was a typical Chinese food restaurant. I love that there are now some products trickling into grocery stores so that adventurous home cooks can experiment with this hybrid cuisine at home.
