Meal planning time! Sunday is my actual meal-planning day, so what better day to share some of my tried-and-true favourites with you? I am all about quick and easy at the moment, with a new baby having just joined 3 older siblings in our house, and this meal plan will definitely leave you with plenty of time out of the kitchen, and plenty of good eats when dinner time comes!

If you like to prep ahead, the tomato sauce, taco lasagna and Japanese chicken coleslaw salad can both be made ahead, and the chicken salad also doubles as a fantastic lunch. Have a great, organized week!


Carrot Lentil Soup …so easy, so healthy, and aren’t Sundays just made for soup?

-serve with homemade naan and cantaloupe

Pasta with slow cooker tomato sauce …the sauce makes lots, so you can freeze some and save some for Friday’s lasagna. Perfect for Meatless Monday, or add ground beef or your favourite meatballs.

-serve with salad and garlic bread

Baked Lemon Parmesan Risotto and Mom’s Roast Chicken …cook 2 extra chicken pieces, set aside, and toss together coleslaw salad after dinner.

Tomato Basil Chicken Casserole

-serve with crusty bread


Teriyaki Chicken (or Beef) Stirfry …the single most regular recipe in my rotation, personalizable to your favourite veggies, and bound to convince you not to buy teriyaki sauce again.

In the spirit of quick and easy, I can’t not tell you about the revelation that is oven-baked pancakes in my house – you need to make these this week for a special breakfast or last-minute dinner when you don’t feel up to real cooking, then add them to the menu forever after, because you’ll be as hooked as I am.
