Each week, to help our readers with their meal planning, we invite an FBC member to put together a weekly menu plan based on recipes from their blog that includes a week’s worth of dinners from Sunday to Saturday. We include a printable shopping list so you can get everything you need and be ready to cook. And you’ll get introduced to some new recipes and meet some great new Canadian food blogs!
This week we hand over the weekly meal plan to Ginni Kelley of Spicy Eggplant and the owner of Ginni's Kitchen.
Whilst I love cooking for my family and friends, I also enjoy days when I can get something out of the freezer. This menu plan is a taste of what I like to cook when I am at home all week. I cook things that can be frozen and by cooking slightly larger quantities, I am saving time for when time is of essence. For instance, the big batch of Cabbage rolls are a guilt free indulgence that is always in the freezer. Leftover curries make fantastic paninis the next day, just by adding some cheese and salad. I need to get more than one family meal out of everything I cook, hence this menu plan.
SUNDAY
Sundays are traditionally for family time together and what better way than to have some fun cooking and rolling some cabbage rolls as a team. The leftovers can be frozen and are lunchbox friendly for any day.
MONDAY
Roasted Thai Eggplants with Mung Beans
We like to have vegetarian meals on Mondays, and one that includes some slow roasted Eggplant is always a hit. The Eggplants can be roasted and frozen ahead of time, so its a quick mea
TUESDAY
A quick and easy fix with some Coronation Chicken, lightly spiced, fruity and nutty.
WEDNESDAY
There's nothing like a spicy sweet Korma when a mid week curry craving strikes. This fruity slowly cooked Korma tastes even better the following day.
THURSDAY
Supa Cu Galuste (Romanian Soup with Dumplings)
After all the spices, I love a lightly fragranced and comforting Romanian soup Supa cu Galuste.
Buttermilk Banana Bread with Chocolate and Walnuts
By having such a delicate soup for dinner, I don't feel guilty when we have some mid-week indulgence with a slice of my Butter milk Banana Bread with Chocolate and Walnuts.
FRIDAY
A quick and easy Shrimp Tikka with Salad is a perfect start to the weekend.

This week's menu plan is from Ginni Kelley, Spicy Eggplant: I am not the traditional Food enthusiast who has always loved cooking. In fact, I could not cook at all until I was 28 and I had no interest in being anywhere near the kitchen before then. I knew what I liked to eat, but it was always made by someone else. My slavery to the kitchen stove began with my falling in love with spices and the amazing things they could do to my food. It became a fascination and despite studying and working in law, I gravitated towards creating food resulting in my becoming a Foodie, a Food Blogger, a Cookbook Author, a culinary instructor and the owner of Ginni's Kitchen.
