There's not doubt about it, enchiladas are a crowd pleaser. And what's not to love? There's tortillas, sauce and lots of cheese! You can fill them with whatever you like - they're a great way to reduce food waste, use leftovers and be kind to your food budget!

Kids and adults alike seem to love them making the a family dinner everyone can agree on. They're messy and delicious - you can make them with meat or tweak them to be vegetarian, vegan, gluten-free, dairy-free - the sky's the limit!  And on that note, we've rounded up 9 different takes on the enchilada - many of which are vegetarian friendly or can be made vegetarian friendly.
