Over 15 Garlic and Garlic Scape Recipes | Food Bloggers of Canada

Garlic is a pantry staple in virtually ever world cuisine and has been for 1000s of years - as far back as ancient Rome and ancient Egypt. Frankly, we can't imagine not being able to cook with it!

It packs a powerful flavour on it's own and maybe it's not something you want to eat a lot of on a first date (although to be honest, if your date can't handle garlic...maybe it's not meant to be!) but it adds so much to pastas, meats, condiments, vegetable dishes, charcuterie platters - the list is endless. It's also long been heralded for it's medicinal properties.

Garlic is very easy to grow at home (here's our guide to growing your own garlic) and you can eat both the scapes (the leaves or stems) or the bulb (which is what most people are familiar with). The scapes are usually harvested in early spring so that the garlic puts all its energy into growing the bulb, which is harvested a little later. Don't confuse garlic scapes with wild leeks (ramps).  They're similar in flavour and come from the same family of plants but they're different.

Scapes are great for grilling or using in pestos or dips.  Garlic bulb segments work in almost every savoury dish you can think of!

This collection of ways to use garlic starts off with some kitchen basics - Garlic Scapes 101, how to roast garlic, how to make make freezable garlic puree pucks for seasoning whenever you need it and how to make a fermented honey garlic that you can keep on hand for seasonings, marinades and more! Master those basics and you'll have always be able to whip up a great dish on the go. Then we dive into some delicious recipe ideas!  We hope you enjoy.
