Every week we pull together some great Canadian recipes from Canadian food bloggers around the web featuring one main ingredient or dish. This week is full of ooey gooey goodness. You guessed it... it's time for cheese recipes!

Cheese please! When you're ranking comfort foods, you can bet that dishes that score high on the comfort food scale invariably have cheese in them. Think grilled cheese sandwiches, baked casseroles, pastas, pizzas... all cheesy delights. Put a cheese board out at a party and you're guaranteed to draw a crowd.  Serve up cheesecake for dessert and it's rare you'll disappoint anyone.

But for this cheese recipe collection we wanted to showcase cheese in some more interesting ways.  Think outside the wheel! So we asked our members to share some of their most unique cheese recipes and they delivered.

Whether it's Korean Corn Cheese or a Paneer Burger, there's a huge variety here. We've got some classics like a Baked Brie (but with one of the most beautiful toppings we've ever seen) and Cheese Dip (but this one's made with beer!).

There's also Broccoli Cheddar Quinoa Cups and Farmer's Cheese Crepes.  Try your hand at Saganaki, a Greek fried cheese dish, or Acharuli Khachapuri - a Georgian Cheese Stuffed Bread Boat!

And some of these dishes like the Fontina, Parmesan and Garlic Roasted Artichokes, the Aged Goat Cheese Tomato Tart and the Feta Fournou are exceptionally simple but make use of limited, high quality and high flavour ingredients that will wow a crowd!

We've even include a few vegan cheese options. Vegan cheeses have improved dramatically in quality and flavour in recent years and they're definitely worth checking out if you love cheese but need a dairy free option!

1. Korean Corn Cheese (Elote Style)

Korean Corn Cheese is cheesy snack that's meant to be eaten with drinks (y'all, it's got corn, cheese and mayo in it!). Pups With Chopsticks decided to put a twist on it and serve it up Elote style with some of the flavours you associate with Mexican grilled corn. This dish uses Mozzarella and Cotija Cheeses but you can use Feta in place of the Cotija in a pinch. Serve it on the patio with some crunchy tortilla chips and some cold beverages for a delicious way to kick back and enjoy a summer evening!
